Wouldn’t disagree with that. I think the human body is most efficient somewhere between what typical humans do now and a pure water diet.

I’ve always heard it stores energy for periods when food sources are not available – I didn’t google search it to see if that has been disproven.
Perhaps your water diet doesn’t feel so bad because you are working through that fat reserve…
