Pictures are hard to read, especially that top picture – poor choice of colors.
On the state level, there’s a correlation between fat and education. The strongest correlation (R^2 = 0.68; 0.65 if you exclude DC) is between the obesity level and the percentage of adults who spent at least one year in college.
