i think the portland educators’ point is not that pb and j are elite foods, but that the majority get to define what is american food, thereby excluding the burrito, the torta, whatever.. So like a crappy jelly and bread combo (basically a doughy sugar ball with some peanut matter smeared on it is “superior” in terms of its american pedigree to other crappy foods.
It’s an extremey lame issue.
however, hereis a super interesting not at all lame cultural food subject:
“spread” …. which is a communal meal shared by prisoners outside the normal food system in prison involving extensive creative food prep with commissary bought, smuggled and pilfered items.
