Its a wonderful wine but I liked it better in the late 90’s when it was a $20 bottle of wine. We had some great artisan cheeses with it, I think. It was after drinking all day and I wish we hadnt opened it as I dont remember drinking it. I let a friend into my closet and said pick whatever you want.

I did have a glass left over that I drank last night with a grilled rib eye with dijon mustard and fresh rosemary. They danced together very nicely.
Enjoy you milestone tonite. I’m sure you deserve it.

I guess my tongue isn’t so refined. Cabs are my favorite, had one last night with a nice ossobuco alla milanese. Can’t think of anything better.

What I’ve learned to appreciate is food and wine that compliment each other. That means making sure that the wine doesn’t overpower the food, and vice versa. The first time you have a pairing that sings together, you’ll know. If its not a big deal to you, then its not about refined so much as unimportant to you.
No good ever comes from letting your buddies raid your wine cellar, ouch.
