My sister’s family has a miniature poodle that is the best dog. I was never a little dog fan, but he’s changed my tune on that! He was so easy to train for anything and is great with the kids, really well behaved.
Here’s a website I found that is a rescue for poodles;
http://www.poodleclubsocal.com/poodlerescue/list.nhtmlWe adopted both our dogs and now I encourage anyone to do the same as there are many great dogs that are dumped and socal has one of the highest euthanization rates outta any state…so check it out before you decide on anything!

It probably won’t work for me though because, like the OP, I’m looking for a dog that doesn’t shed. According to the dog breed site I visited, the Weimaraner is an average shedder.
I had never seen one before today after you mentioned it and it has the temperament that I’m looking for and that grey coat is just beautiful! Dang it. π

Weimeraners are magnificent dogs, but remember, as with most sporting breeds, they need a LOT of exercise, and, as you state, they are quite large.
One thing I look for in a dog breed is longevity. Most large breeds don’t live very long. I personally get quite attached emotionally to my dogs, and it is quite painful when they pass on. I don’t like to go through that every 7 years or so. Many of the smaller breeds live quite a bit longer.
I myself am an Australian Cattle Dog fan, and have been for years (Mad Max’s dog). The one I have now I have had for 14 years, has been with me since undergrad. Even took him to Japan for 3 years. They are incredibly intelligent, very active, but twice a year they shed their coat like the Peanuts character Pigpen. Drives my wife nuts.
